Get the enchiladas suizas!
I was in town for lunch and stopped at Red Iguana and got the amazing enchiladas suizas. I got one order, which comes with two delicious mole enchiladas. The place is popular though, so expect to wait at least 30 minutes.
worth the wait
I am visiting SLC and Red Iguana was recommended. Arrived before 6PM and it was already full. Later a line was out the door. Food excellent, authentic Mexican. BIG plates, we shared a soup and combo plate and it was more than enough. Waiters were nice eye candy.
Holy Mole!
Don't get it twisted...Salt Lake has more than just mormons and bland church potluck food. After three years the mole enchiladas I had at Red Iguana are still fresh in my memory. They have lots of options to choose from and really authentic, unique flavors in their sauces. This was three years back, but they have been doing something right.

Your best choice for qualtiy Mexican fare
You may wait to get seated, you may feel you are crammed in with other diners, but wait. The food is great, the selection extensive, the price is reasonable. Liquour is availbable, too. Probably the best bed for Mexican Food in Utah.
